Ingredients
Makes 4 to 6 servings
- 2 medium English cucumbers, peeled and cut into 1/4-inch slices
- 2 tablespoons chopped fresh parsley
- 3 tablespoons toasted sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 teaspoons rice vinegar
- 1 teaspoon sugar
- 2 tablespoons toasted sesame seeds
Method
- In a small bowl, combine the cucumbers and parsley and set aside
- In a separate small bowl, combine the oil, soy sauce, mirin, vinegar and sugar, stirring to blend
- Pour the dressing over the cucumbers
- Set aside for at least 10 minutes
- Spoon the cucumber salad into small bowls, sprinkle with sesame seeds and serve
