Simple Chocolate Pudding Slow Cooker Recipe

Ingredients

  • 1/3 cup (67 g) sugar
  • 2 tbsps (28 g) unsalted butter
  • ¼ cup (60 ml) egg substitute
  • 1 ounce 28g unsweetened chocolate, melted and cooled
  • 1¼ cups (156 g) flour
  • 1 tsp baking soda
  • ½ cup (120 ml) buttermilk
  • ½ teaspoon vanilla

Method

  1. Cream sugar and butter with an electric mixer
  2. Add egg substitute and mix well
  3. Beat in chocolate
  4. Stir together flour and baking soda
  5. Add to sugar mixture alternately with buttermilk and vanilla; beat well
  6. Divide into two well-greased 1-pound (455 g) vegetable cans
  7. Cover tightly with foil
  8. Place in slow cooker
  9. Pour ½ cup (120 ml) warm water around cans
  10. Cover and cook on high 1½ hours
  11. Remove cans from cooker; cool 10 minutes; unmold
  12. Yield: 8 servings
  13. Per serving: 23 g water; 160 calories (29% from fat, 10% from protein, 61% from carb)
