Simple Taco Soup Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) extra-lean ground beef
  • 1 cup (160 g) chopped onion
  • 1 cup (150 g) chopped green bell pepper
  • 2 tbsps (15 g) salt-free mexican seasoning
  • 4 cups (950 ml) low-salt vegetable juice
  • 1 cup (260 g) low-salt salsa

Method

  1. Brown meat in skillet over medium-high heat
  2. Drain
  3. Combine meat and remaining ingredients in slow cooker
  4. Cover and cook on low 8-10 hours
  5. Yield: 6 servings
  6. Per serving: 285 g water; 235 calories (50% from fat, 27% from protein, 23% from carb)

Serve with your choice of traditional taco toppings, such as lettuce, tomato, shredded cheese, sour cream, etc
