Southwestern Corn Soup Slow Cooker Recipe

Ingredients

  • 225g diced green chilies, undrained
  • 1 cup (120 g) sliced zucchini
  • 1 cup (160 g) thinly sliced onion
  • ½ teaspoon minced garlic
  • 1 tsp cumin
  • 2 360 g diced onion
  • 2 L low-salt vegetable broth
  • 2 480 g no-salt-added canned chickpeas, rinsed and drained
  • 10 ounces 280 g frozen corn
  • 1 tsp oregano
  • ½ cup (30 g) chopped fresh cilantro

Method

  1. Combine all ingredients in slow cooker
  2. Cook on low 4 hours
  3. Yield: 6 servings
  4. Per serving: 349 g water; 177 calories (15% from fat, 24% from protein, 62% from carb)
