Spaghetti Squash With Tomatoes Basil Recipe


Makes 4 servings

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 1/2 cups ripe grape tomatoes, halved lengthwise
  • 1/4 cup shredded fresh basil leaves
  • salt and freshly ground black pepper


  1. In a large pot of boiling water, cook the squash until it is soft when pierced with a fork, 30 to 40minutes
  2. Halve the squash lengthwise, scoop out the seeds and discard
  3. Use a fork to scrape out the strands of squash and transfer them to a bowl
  4. Discard the shell
  5. In a large skillet, heat the oil over medium heat
  6. Add the garlic and cook until fragrant, 30seconds
  7. Add the cooked squash, tomatoes, basil and salt and pepper to taste
  8. Cook, stirring, until hot, about 5 minutes
  9. Serve immediately
