Coconut Jasmine Rice Edamame Recipe


Makes 4 servings

  • 1 1/2 cups shelled fresh or frozen edamame
  • 1 1/2 cups jasmine rice
  • 2 (13.5-ounce) cans unsweetened coconut milk
  • 1 cup water
  • salt
  • 1/2 cup minced fresh cilantro
  • 1/2 cup chopped roasted cashews


  1. Bring a large saucepan of salted water to a boil over high heat
  2. Add the edamame and cook until tender, about 10 minutes
  3. Drain and set aside
  4. In a large saucepan, combine the rice, coconut milk and water and bring to a boil, stirring occasionally
  5. Reduce heat to low, add salt to taste, cover and simmer until the rice is tender, about 20 minutes
  6. Stir in the cooked edamame, cover and remove from heat
  7. Set aside for 10 minutes
  8. Transfer to a serving bowl and stir in the cilantro and cashews
  9. Serve immediately
