Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 1 small red onion, minced
- 1 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch dice
- 1/4 cup water
- 1 tablespoon pure maple syrup or agave nectar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground allspice
- 1/8 teaspoon ground cayenne
- salt
- 1/2 cup sweetened dried cherries
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook for 5 minutes
- Add the sweet potatoes, cover and cook, stirring occasionally, for 10 minutes
- Add the water, maple syrup, lemon juice, chili powder, allspice, cayenne and salt to taste
- Cook, stirring frequently, until the potatoes are tender, about 10 minutes longer
- About 2 minutes before ready to serve, stir in the cherries
- Serve immediately
