Ingredients
Makes 4 servings
- 1/3 cup pineapple juice
- 2 tablespoons fresh lime juice
- 1 tablespoon agave nectar
- ground cayenne
- 1 navel orange, peeled and cut into 1-inch dice
- 1 ripe pear, cored and cut into 1-inch dice
- 1 ripe banana, cut into 1/4-inch slices
- 1 1/2 cups fresh or canned pineapple chunks
- 2 tablespoons sweetened dried cranberries
- 2 tablespoons shelled pumpkin seeds (pepitas)
- 1 tablespoon chopped fresh mint
Method
- In a large bowl, combine the pineapple juice, lime juice, agave nectar and cayenne to taste, stirring to blend well
- Add the orange, pear, banana and pineapple
- Toss gently to combine, sprinkle with the cranberries, pumpkin seeds and mint and serve
