Ingredients
Makes 4 servings
- 2 cups fresh or canned diced pineapple, juice reserved
- 1 mango, peeled, pitted and cut into 1/2-inch dice
- 2 cups thinly sliced hulled fresh strawberries
- 1 ripe banana
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lime juice
- 1 tablespoon sugar
Method
- In a large bowl, combine the pineapple, mango and strawberries
- Set aside
- In a blender or food processor, puree the banana with the reserved pineapple juice, orange juice, lime juice and sugar
- Pour the dressing over the fruit, toss gently to combine and serve
