Strawberry Parfaits With Cashew Creme Recipe


Makes 4 servings

  • 1/2 cup unsalted raw cashews
  • 4 tablespoons sugar
  • 1/2 cup plain or vanilla soy milk
  • ¾ cup firm silken tofu, drained
  • 1 teaspoon pure vanilla extract
  • 2 cups sliced strawberries 1 teaspoon fresh lemon juice
  • fresh mint leaves, for garnish


  1. In a blender, grind the cashews and 3 tablespoons of the sugar to a fine powder
  2. Add the soy milk and blend until smooth
  3. Add the tofu and vanilla and continue to blend until smooth and creamy
  4. Scrape the cashew mixture into a medium bowl, cover and refrigerate for 30 minutes
  5. In a large bowl, combine the strawberries, lemon juice and remaining 1 tablespoon sugar
  6. Stir gently to combine and set aside at room temperature for 20 minutes
  7. Spoon alternating layers of the strawberries and cashew creme into parfait glasses or wine glasses, ending with a dollop of the cashew creme
  8. Garnish with mint leaves and serve
