Crock Pot Greek Stuffed Chicken Breasts Slow Cooker Recipe


  • 2 lbs boneless skinless chicken breast (about 6 6oz chicken breasts)
  • 3 cups finely chopped spinach
  • 2 roasted red peppers, chopped
  • 1/4 cup sliced black olives
  • 1 cup chopped artichoke hearts
  • 4 oz. reduced fat feta
  • 1 tbsp oregano, chopped
  • 1 tsp garlic powder
  • 1.5 cups chicken broth
  • salt and pepper


  1. Place the chopped spinach, roasted peppers, artichoke hearts, oregano, feta, garlic powder, salt and pepper in a bowl and mix well
  2. Rub the meat pieces with the above mixture and season well
  3. Crate a deep slit in the middle of the breast pieces ensuing not to separate the pieces
  4. Insert the vegetable mixture into the slits and place in the crock pot with the stuffed side facing upwards
  5. Pour the chicken broth over the breast pieces and allow to cook for 4 hours on low
  6. Ensure the chicken is cooked fully prior to serving
