Sweet-Bread From The Algarve Portuguese Recipe

Ingredients

  • 10 c. flour
  • 2 c. milk
  • 1/4 lb. butter
  • 1 yeast cake
  • 6 eggs
  • 1/4 c. warm water to melt yeast cake
  • 2 1/2 c. sugar
  • 2 tbsp. Crisco

Method

  1. Beat eggs until golden
  2. Add sugar and warm milk; melt butter and Crisco
  3. Pour milk mixture onto eggs
  4. Stir well
  5. Pour yeast cake that has been melted in warm water into this mixture
  6. Add flour; stir well
  7. Knead for 15 minutes
  8. Let rise until double in bulk
  9. Knead again
  10. Let rise until triple in bulk
  11. Grease 3 large bread pans
  12. Separate dough into 3 pans
  13. Let rise until double in bulk
  14. Slit top with sharp knife or scissors and brush top with egg whites
  15. Bake at 300 degrees for 45 to 50 minutes
  16. Cool on rack
