Sweet Potato Pesto Egg Bake Recipe
Ingredients
Makes 1 serving
- 2 tablespoons previously cooked mashed sweet potato
- 1 egg
- 1 tablespoon pesto
Method
- Lightly grease one small ramekin with oil of choice
- Mash sweet potato in the bottom of the ramekin, distributing evenly
- Crack one egg over the top and cover with a paper towel
- Microwave for 30 seconds
- Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave uncovered another 30-40 seconds until egg is fully cooked
- Let cool slightly, top with pesto, and serve
