Sweet Ricotta Souffle Recipe


  • 1 C. part-skim ricotta cheese
  • 2 large eggs, separated
  • 3 tbsp Splenda granular
  • 2 tsp grated lemon zest
  • 1/2 tsp lemon extract
  • 1/2 tsp vanilla extract


  1. Set your oven to 375 degrees F before doing anything else and grease 4 (4-oz ) ramekins
  2. In a large bowl, add the egg yolks, ricotta, 1 tbsp of the Splenda, lemon zest and both extracts and beat until well combined
  3. In another small bowl, add the egg whites and with an electric mixer, beat on high speed until soft peaks form
  4. Slowly, add remaining 2 tbsp of the Splenda and beat until stiff peaks form
  5. Gently, fold egg whites into the ricotta mixture
  6. Place the ricotta mixture into the prepared ramekins evenly
  7. Cook in the oven for about 15 minutes
  8. Remove from the oven and serve immediately
