Three-Grain Bread Recipe


Makes 1 loaf

  • 1 1/4 cups hot water
  • 2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 1/4 teaspoons salt
  • 1 package active dry yeast (21/4 teaspoons)
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups oat flour
  • 1 cup yellow cornmeal


  1. In a large bowl, combine the water, maple syrup, oil and salt
  2. Let cool until warm (not hot) and add the yeast
  3. Stir to combine, then set aside for 10 minutes
  4. In a separate large bowl, combine the whole wheat flour, oat flour and cornmeal and stir until well combined
  5. Add about half the flour mixture to the liquid mixture, stirring to blend
  6. Work in the remaining flour mixture until combined, turn out the dough out onto a lightly floured surface
  7. Knead the dough until it is smooth and elastic, about 8 minutes
  8. Place the dough into a large lightly oiled bowl, turning the dough to coat with oil
  9. Cover with plastic wrap or a clean dish towel and let rise in a warm place until doubled in size, about 1 hour
  10. Test dough by poking it with your finger
  11. Its ready if the indentation from your finger remains
  12. Lightly oil a large baking sheet and set aside
  13. Punch the dough down and turn it out onto a lightly floured surface
  14. Shape the dough into a round or long loaf and place it on the prepared baking sheet
  15. Cover with plastic wrap or a clean dish towel, set aside in a warm place and let rise again for about 1 hour
  16. Preheat oven to 375°F
  17. Uncover the dough and use a sharp knife to cut 3 diagonal slashes in the top of the loaf, about 1/4 inch deep
  18. Bake until golden brown, 40 to 45 minutes
  19. The bread is done if it sounds hollow when tapped on the bottom
  20. Cool on a wire rack for 30 minutes before slicing
