Three-Seed Seitan Recipe


Makes 4 servings

  • 1/4 cup unsalted shelled sunflower seeds
  • 1/4 cup unsalted shelled pumpkin seeds (pepitas)
  • 1/4 cup sesame seeds
  • ¾ cup all-purpose flour
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound seitan cut into bite-size pieces
  • 2 tablespoons olive oil


  1. In a food processor, combine the sunflower seeds, pumpkin seeds and sesame seeds and grind toa powder
  2. Transfer to a shallow bowl, add the flour, coriander, paprika, salt and pepper and stir to combine
  3. Moisten the seitan pieces with water, then dredge in the seed mixture to coat completely
  4. In a large skillet, heat the oil over medium heat
  5. Add the seitan and cook until lightly browned and crispy on both sides
  6. Serve immediately
