  • 2 tablespoons olive oil
  • 1/2 cup sliced red onion
  • 1 tablespoon minced garlic
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground turmeric
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 pound jumbo shrimp, peeled and deveined, or 1/2 pound boneless, skinless chicken breasts, cut into chunks
  • 4 cups cooked short-grain brown rice or regular brown rice
  • 2 Roma tomatoes, diced
  • 2 cups low-sodium chicken broth
  • 1 bay leaf
  • 21/2 cups frozen peas
  • sea salt and black pepper
  • garnish: fresh lemon juice, fresh parsley, red pepper flakes


  1. To a deep nonstick skillet over medium heat, add the olive oil, garlic, and red onion
  2. Cook until the onion has turned brown and translucent, 3 to 5 minutes, being careful not to burn the garlic
  3. Add the paprika and turmeric to the oil and cook for 1 minute, being careful not to burn the spices
  4. Add the chicken cubes and cook until the outside edges are browned, about 5 minutes
  5. Add the shrimp and cook for an additional 3 minutes, stirring continuously
  6. Add the rice, tomatoes, and broth
  7. Bring to a simmer, then add the bay leaf and reduce the heat
  8. Cook for an additional 6 to 8 minutes, then fold in the frozen peas and stir
  9. Simmer for about 3 minutes more, then season to taste with salt and pepper
  10. Remove and discard the bay leaf
  11. Garnish and enjoy warm
