Salmon Casserole Slow Cooker Recipe

Ingredients

  • 2 medium potatoes, peeled and sliced
  • 2 tbsps (24 g) flour
  • 455g salmon, drained and flaked
  • ½ cup (80 g) chopped onion
  • 1 can (280 g) low-salt cream of mushroom soup
  • ¼ cup (60 ml) water
  • dash nutmeg
  • Method

  • Spray slow cooker with nonstick cooking spray
  • Place half of the potatoes in slow cooker
  • Sprinkle with half of the flour
  • Cover with half the flaked salmon and then sprinkle with half the onion
  • Repeat layers
  • Combine soup and water; pour over top of potato and salmon mixture
  • Sprinkle with just a dash of nutmeg
  • Cover and cook on low for 7 to 9 hours or until potatoes are tender
  • Yield: 6 servings
  • Per serving: 316 g water; 323 calories (15% from fat, 27% from protein, 58% from carb)
