Vegetable Medley Slow Cooker Recipe

Ingredients

  • ¾ cup (120 g) sliced onion
  • 1 cup (100 g) celery, cut in 2-inch (5 cm) strips
  • 1 cup (130 g) carrots, cut in 2-inch (5 cm) strips
  • 1 cup (100 g) green beans
  • ½ cup (75 g) diced green bell pepper
  • 1 large tomato, sliced
  • ¼ cup (55 g) unsalted butter
  • 1/8 teaspoon black pepper
  • 1 tbsp (13 g) sugar
  • 2 tbsps (25 g) tapioca

Method

  1. Mix ingredients and place in slow cooker
  2. Cook on low for 3 to 4 hours
  3. Yield: 6 servings
  4. Per serving: 107 g water; 126 calories (54% from fat, 4% from protein, 42% from carb)
