Walnut Salad With Raspberry-Walnut Vinaigrette Recipe


Makes 4 servings

  • 1 tablespoon raspberry jam
  • 2 tablespoons sherry vinegar
  • 1/4 cup walnut oil
  • salt and freshly ground black pepper
  • 1 medium head butterhead lettuce, torn into bite-size pieces
  • 1/3 cup toasted coarsely chopped walnuts
  • 2 tablespoons coarsely chopped red onion
  • 1/2 cup fresh raspberries


  1. In a blender or food processor, combine the jam, vinegar, oil and salt and pepper to taste
  2. Blend until smooth
  3. In a large bowl, combine the lettuce, walnuts and onion
  4. Add the dressing and toss gently to combine
  5. Divide among salad plates and garnish with fresh raspberries
