White Bean Artichoke Spread Recipe


Makes about 2 1/2 cups

  • 1 (6-ounce) jar marinated artichoke hearts, drained
  • 1 1/2 cups cooked or 1 can of white beans, drained and rinsed
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cayenne
  • 2 tablespoons pitted chopped kalamata olives


  1. In a food processor, combine the artichoke hearts, beans, parsley, oil, lemon juice, salt and cayenne
  2. Process until well blended
  3. Taste, adjusting seasonings if necessary
  4. Transfer to a medium bowl and top with the chopped olives
  5. If not using right away, cover and refrigerate until needed
  6. Properly stored, it will keep for up to 3 days
