White Chocolate Cranberry Cheesecake Recipe



  • 1 (9-oz.) package chocolate wafer cookies, finely ground
  • 1/2 (4-oz.) semisweet chocolate baking bar, chopped
  • 1/2 cup butter, melted
  • 1/3 cup sugar


  • 1 (6-oz.) package white chocolate baking squares, chopped
  • 1/4 cup whipping cream
  • 2 (8-oz.) packages cream cheese, softened
  • 2 tablespoons all-purpose flour
  • 1/3 cup sugar
  • 4 large eggs
  • 1/2 cup chopped, sweetened dried cranberries
  • 1/2 (4-oz.) semisweet chocolate baking bar, finely chopped
  • 1/4 cup amaretto liqueur


  • 1 (12-oz.) package fresh cranberries
  • 1 cup sugar
  • 1/2 cup seedless raspberry jam
  • 1/4 cup water


  1. Preheat oven to 350F
  2. In a large bowl, combine crushed cookies, chocolate, butter and sugar
  3. Press into the bottom and up the sides of a 9 inch springform pan
  4. Bake for 10 minutes
  5. Reduce heat to 325F
  6. Melt white chocolate with whipping cream in a saucepan or in the microwave
  7. In a large mixing bowl, beat cream cheese, flour and sugar until smooth
  8. Add in eggs, one at a time, until just combined
  9. Stir in cranberries, chocolate, amaretto liqueur and whipping cream mixture
  10. Pour batter into crust
  11. Bake for 30 to 35 minutes, until center is just set
  12. Cool, cover and refrigerate overnight
  13. For topping, bring water, cranberries and sugar to a boil in a medium saucepan
  14. Boil for 8 minutes, stirring often, until sauce thickens
  15. Remove from heat and stir in jam
  16. Cool, cover and chill overnight
  17. Top cheesecake to prepare
  18. Garnish suggestion – fresh mint leaves
