Whole Wheat Raisin Bread Recipe


Makes 1 loaf

  • 3 tablespoons dark molasses
  • 1 package active dry yeast (21/4 teaspoons)
  • 1 1/2 cup warm plain soy milk
  • 2 cups whole wheat flour
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 cup regular or golden raisins


  1. In a small bowl, combine the molasses and yeast
  2. Add 1/4 cup of the soy milk and stir until yeast is dissolved
  3. Set it aside for 5 minutes
  4. In a large bowl, combine the wheat flour, all-purpose flour, salt, cinnamon and raisins
  5. Add the yeast mixture and the remaining 1 1/4 cups soy milk, stirring to form a soft dough
  6. Knead the dough for 5 minutes, then place it in a lightly oiled bowl, turning the dough to coat with oil
  7. Cover with plastic wrap or a clean dish towel and let rise in a warm place until doubled in size, about 1 hour
  8. Test dough by poking it with your finger
  9. Its ready if the indentation from your finger remains
  10. Lightly oil a 9-inch loaf pan and set it aside
  11. Punch the dough down and turn it out onto a lightly floured surface
  12. Shape the dough into a loaf and place it in the prepared pan
  13. Cover with plastic wrap or a clean tea towel and let rise in a warm place for 1 hour
  14. Preheat the oven to 350°F
  15. Uncover the dough and bake for 45 minutes, or until the top is golden-brown
  16. During the last 20 minutes of baking time, cover loosely with foil
  17. Remove the loaf from the oven and set aside to cool for 5 minutes, then turn out onto a wire rack to cool for 30 minutes before slicing
