Ziti With Abruzzese Vegetable Ragu Recipe


Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium carrot, finely chopped
  • 1 medium yellow bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste 1/2 cup dry red wine
  • 1/2 teaspoon dried oregano
  • 1 (28-ounce) can diced tomatoes, drained
  • 1/4 teaspoon crushed red pepper
  • salt and freshly ground black pepper
  • 1 pound ziti
  • 1/4 cup minced fresh parsley, for garnish


  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, carrot, bell pepper and garlic
  3. Cover and cook until soft, about 10 minutes
  4. Uncover and stir in the tomato paste, wine and oregano
  5. Add the tomatoes, crushed red pepper and salt and black pepper to taste
  6. Simmer for 20 minutes, uncovered, stirring occasionally
  7. In a large pot of boiling salted water, cook the ziti over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  8. Drain well and transfer to a large serving bowl
  9. Add the sauce and toss gently to combine
  10. Sprinkle with parsley and serve immediately
