Ingredients

Servings : 4

• 3 medium carrots grated
• 1/2 cup (70g) raisins or sultanas
• 1/2 cup (70g) peanuts or walnuts
• 1 tbsp mayonnaise or greek yoghurt
• 1 1/2 tablespoons balsamic vinegar
• 1 tsp brown or white sugar
• 1 tsp balsamic vinegar
• 1 tsp lemon juice

Method

1. Combine carrot, raisins and nuts in a bowl
2. Combine mayonnaise and remaining ingredients, stirring well
3. Add to carrot mixture
4. Toss gently
5. Cover and chill
