Baked Chocolate Pudding Recipe

Ingredients

Makes 6 servings

  • 1 cup sugar
  • 1 tablespoon canola or other neutral oil
  • 1 1/2 cups plain or vanilla soy milk
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Method

  1. Preheat the oven to 350°F
  2. Grease 6 individual oven-safe dessert ramekins and set aside
  3. In a medium bowl, mix the sugar and oil until well blended
  4. Stir in the soy milk and vanilla and set aside
  5. In a separate medium bowl, combine the flour, cocoa, baking powder and salt
  6. Mix the dry ingredients into the wet ingredients until just blended
  7. Spoon the pudding into the prepared ramekins and bake until set, about 25 minutes
  8. Let stand at least 10 minutes before serving
  9. Serve warm or at room temperature
