Basic Simmered Seitan Recipe

Ingredients

Makes about 2 pounds

Seitan

  • 1¾ cups wheat gluten flour (vital wheat gluten)
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sweet paprika
  • 1 tablespoon olive oil
  • 3 tablespoons soy sauce
  • 12/3 cups cold water Simmering Liquid
  • 2 quarts water
  • 1/2 cup soy sauce
  • 2 garlic cloves, crushed

Method

  1. Make the seitan: In a food processor, combine the wheat gluten flour, nutritional yeast, salt, onion powder and paprika
  2. Pulse to blend
  3. Add the oil, soy sauce and water and process for a minute to form a dough
  4. Turn the mixture out onto a lightly floured work surface and knead until smooth and elastic, about 2 minutes
  5. Make the simmering liquid: In a large saucepan, combine the water, soy sauce and garlic
  6. Divide the seitan dough into 4 equal pieces and place in the simmering liquid
  7. Bring just to a boil over medium-high heat, then reduce heat to medium-low, cover and simmer gently, turning occasionally, for 1 hour
  8. Turn off the heat and allow the seitan to cool in the liquid
  9. Once cool, the seitan can be used in recipes or refrigerated in the liquid in a tightly sealed container for up to a week or frozen for up to 3 months
