Basic Vegan Polenta Recipe
Ingredients
Makes 4 servings
- 3 cups vegetable broth or water
- salt
- 1 cup polenta cornmeal
- 1 tablespoon olive oil
- freshly ground black pepper
Choice of:-
- sauteed shallots, red chard or spinach and porcini mushrooms
- chopped cooked artichoke hearts
- thawed frozen peas
- canned chopped mild or hot green chiles
- chopped sauteed Tempeh Bacon
- fresh or thawed frozen corn kernels
- finely minced canned chipotle chiles in adobo
- chopped fresh cilantro or parsley
Method
- Bring the broth to a boil in a large saucepan
- Salt the water, then slowly stream in the polenta, whisking constantly
- Reduce the heat to low and continue whisking until the polenta thickens and pulls away from the sides of the saucepan, about 15 minutes
- Stir in the olive oil
- Serve as is, seasoned with salt and pepper to taste and with your sauce or topping of choice, or smooth into a loaf pan and chill for at least 2 hours, then slice and fry
- Once the polenta is cooked, stir in any of the optional ingredients
