Basic Vegan Polenta Recipe

Ingredients

Makes 4 servings

  • 3 cups vegetable broth or water
  • salt
  • 1 cup polenta cornmeal
  • 1 tablespoon olive oil
  • freshly ground black pepper

Choice of:-

  • sauteed shallots, red chard or spinach and porcini mushrooms
  • chopped cooked artichoke hearts
  • thawed frozen peas
  • canned chopped mild or hot green chiles
  • chopped sauteed Tempeh Bacon
  • fresh or thawed frozen corn kernels
  • finely minced canned chipotle chiles in adobo
  • chopped fresh cilantro or parsley

Method

  1. Bring the broth to a boil in a large saucepan
  2. Salt the water, then slowly stream in the polenta, whisking constantly
  3. Reduce the heat to low and continue whisking until the polenta thickens and pulls away from the sides of the saucepan, about 15 minutes
  4. Stir in the olive oil
  5. Serve as is, seasoned with salt and pepper to taste and with your sauce or topping of choice, or smooth into a loaf pan and chill for at least 2 hours, then slice and fry
  6. Once the polenta is cooked, stir in any of the optional ingredients
