Beef Dripping Recipe


Serves about 4:6

  • 4 center-cut meaty beef or veal marrow bones, about 3 inches long
  • 1kg fatty meat bones
  • salt, pepper to taste


  1. Preheat your oven to 450 degrees
  2. Stand the marrow bones up on end in a baking dish
  3. Roast the bones about 20 minutes
  4. Cover and lower to 300 and roast another 90 minutes
  5. Then, when it’s done, take the beef out of the roasting tin and leave to rest in the usual way
  6. Tip the roasting tin a little and take off the juices you need to make the gravy from below the fat using a baster
  7. Then pour about half a cup of boiling water over the fatty remains in the roasting tin which is still on the hob
  8. Loosen any bits of meat with a wooden spatula or a rigid silicon fish slice
  9. Pour the lot into a heatproof dish
  10. Leave to cool, and then put in the fridge for a few days, or freeze it (you can use it from frozen)
