Apricot-Walnut Scones

Apricot-Walnut Scones


Makes 8 scones

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/2 cup vegan margarine, softened
  • 1/3 cup chopped dried apricots
  • 1/3 cup chopped walnuts
  • 1/3 cup soy milk


  1. Preheat the oven to 375°F
  2. Lightly oil a baking sheet and set aside
  3. In a large bowl, combine the flour, sugar, baking powder, baking soda, allspice and salt
  4. Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
  5. Mix in the apricots, walnuts and soy milk, stirring until just blended
  6. Do not overmix
  7. Transfer the dough to a lightly floured work surface and pat the dough into a 1-inch-thick circle
  8. Cut the dough into 8 wedges and place them on the prepared baking sheet
  9. Bake until golden brown, about 20 minutes
  10. Cool for 5 minutes
  11. Serve warm
