Braised Cabbage And Apples Recipe

Ingredients

Makes 6 servings

  • 2 tablespoons olive oil
  • 1 small head red cabbage, shredded
  • 1 small head savoy cabbage, shredded
  • 1 Granny Smith apple
  • 1 red cooking apple, such as Rome or Gala
  • 2 tablespoons sugar
  • 1 cup water
  • 1/4 cup cider vinegar
  • salt and freshly ground black pepper

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the shredded red and savoy cabbage, cover and cook until slightly wilted, 5 minutes
  3. Core the apples and cut them into 1/4-inch dice
  4. Add the apples to the cabbage, along with the sugar, water, vinegar and salt and pepper to taste
  5. Reduce heat to low, cover and simmer until the cabbage and apples are tender, stirring frequently, about 20 minutes
  6. Serve immediately
