Ingredients
Makes 6 servings
- 2 tablespoons olive oil
- 1 small head red cabbage, shredded
- 1 small head savoy cabbage, shredded
- 1 Granny Smith apple
- 1 red cooking apple, such as Rome or Gala
- 2 tablespoons sugar
- 1 cup water
- 1/4 cup cider vinegar
- salt and freshly ground black pepper
Method
- In a large saucepan, heat the oil over medium heat
- Add the shredded red and savoy cabbage, cover and cook until slightly wilted, 5 minutes
- Core the apples and cut them into 1/4-inch dice
- Add the apples to the cabbage, along with the sugar, water, vinegar and salt and pepper to taste
- Reduce heat to low, cover and simmer until the cabbage and apples are tender, stirring frequently, about 20 minutes
- Serve immediately
