Broccoli-Stuffed Rockfish Seafood Recipe

Ingredients

  • 3 1/2 pounds dressed whole rockfish — thawed if necessary
  • 1 package frozen chopped broccoli – (10 oz) — thawed, and
  • well drained
  • 1/4 cup minced onion
  • 2 tablespoons oil
  • 2 cups fresh bread crumbs
  • 1/3 cup sliced almonds
  • 3 tablespoons milk
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter or margarine — melted
  • 1/4 cup dry white wine or water

Method

  1. Rinse and dry rockfish; dry cavity
  2. Score one side of rockfish diagonally about 1/2-inch deep and at 1-inch intervals
  3. Saute broccoli and onion in oil until onion is tender and all moisture has evaporated
  4. Combine with crumbs, almonds, milk, lemon juice, salt and pepper
  5. Fill cavity of fish with dressing; place scored-side up in 12 1/2- by 9- by 2-inch greased baking dish
  6. Brush with butter; pour wine over fish
  7. Bake at 450 degrees
  8. Allowing about 10 minutes cooking time per inch of thickness measured at its thickest part after stuffing or until fish flakes easily when tested with a fork.
  9. This recipe yields 6 or 7 servings
