Brown Lentils With Herbs Pressure Cooker Recipe


SERVES 4 to 6 as a side dish – Cooker: 5- to 7-quart – Time: 9 minutes at HIGH pressure

  • 2 tablespoons extra virgin olive oil
  • 1 medium white onion, finely chopped
  • 2 medium carrots, chopped into ¼-inch pieces
  • 2 teaspoons dried herbes de Provence
  • 2½ cups chicken broth
  • 1 cup dried brown lentils, picked over and rinsed
  • salt and freshly ground black pepper


  1. In a 5- to 7-quart pressure cooker, heat the oil over medium-high heat
  2. Add the onion and cook, stirring occasionally, until it just begins to soften, about 2 minutes; don’t let it brown
  3. Add the carrots, herbes de Provence, broth, and lentils and stir to combine well and coat the lentils with the oil
  4. Close and lock the lid
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 9 minutes
  8. Remove the pot from the heat
  9. Open the cooker with the Quick Release method
  10. Be careful of the steam as you remove the lid
  11. Stir and taste for salt and pepper
  12. The lentils should still be firm but tender
  13. If they are not quite tender, relock the cooker, bring back up to HIGH pressure, and cook for 1 to 2 minutes longer
