Brunswick Stew Slow Cooker Recipe
Ingredients
- 2-3 potatoes, peeled and cut in ½-inch (1 3 cm) pieces
- 280g frozen lima beans
- 280g frozen okra
- 280g frozen corn
- 420 g diced cooked chicken breast
- 1 tbsp (13 g) sugar
- ½ teaspoon rosemary
- ¼ teaspoon black pepper
- ¼ teaspoon cloves
- bay leaf
- 950 ml low-salt chicken broth
- 1 can 14 ounces, or 400 g no-salt-added whole peeled tomatoes, cut up
Method
- Place potatoes and frozen vegetables in slow cooker
- Add chicken, sugar, rosemary, pepper, cloves, and bay leaf
- Pour chicken broth and undrained tomatoes over mixture
- Cover and cook on low for 8 to 10 hours
- Remove bay leaf and stir well before serving
- Yield: 10 servings
- Per serving: 297 g water; 203 calories (9% from fat, 36% from protein, 56% from carb)
