Brunswick Stew Slow Cooker Recipe

Ingredients

  • 2-3 potatoes, peeled and cut in ½-inch (1 3 cm) pieces
  • 280g frozen lima beans
  • 280g frozen okra
  • 280g frozen corn
  • 420 g diced cooked chicken breast
  • 1 tbsp (13 g) sugar
  • ½ teaspoon rosemary
  • ¼ teaspoon black pepper
  • ¼ teaspoon cloves
  • bay leaf
  • 950 ml low-salt chicken broth
  • 1 can 14 ounces, or 400 g no-salt-added whole peeled tomatoes, cut up

Method

  1. Place potatoes and frozen vegetables in slow cooker
  2. Add chicken, sugar, rosemary, pepper, cloves, and bay leaf
  3. Pour chicken broth and undrained tomatoes over mixture
  4. Cover and cook on low for 8 to 10 hours
  5. Remove bay leaf and stir well before serving
  6. Yield: 10 servings
  7. Per serving: 297 g water; 203 calories (9% from fat, 36% from protein, 56% from carb)
