Cardamom Carrot Cake Recipe


Servings : 4-6 dishes.

  • 1 1/2 cups whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1/2 cup soy yogurt
  • 1/2 cup applesauce
  • 1 cup maple syrup
  • 1/2 cup coconut oil
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract
  • 1 pinch of salt


  1. In a large bowl, sift the flours with baking soda, baking powder, cardamom and lemon juice, as well as a pinch of salt
  2. In another bowl, mix the lemon juice, yogurt, applesauce, maple syrup, vanilla and coconut oil
  3. Combine the two mixtures then fold in the grated carrots
  4. Pour the batter into a greased 9-inch cake pan then bake in a preheated oven at 350F for 40-50 minutes or until a skewer inserted in the middle of the cake comes out clean
  5. Serve sprinkled with powdered sugar
