Air Fryer Chicken Parmesan

Ingredients

SERVES 4.

  • 2 (6-ounce) boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 4 tablespoons full-fat mayonnaise, divided
  • 1 cup shredded mozzarella cheese, divided
  • 1 ounce pork rinds, crushed
  • 1/2 cup grated Parmesan cheese, divided
  • 1 cup low-carb, no-sugar-added pasta sauce

Method

  1. Slice each chicken breast in half lengthwise and pound out to 3/4 thickness
  2. Sprinkle with garlic powder, oregano, and parsley
  3. Spread 1 tablespoon mayonnaise on top of each piece of chicken, then sprinkle 1/4 cup mozzarella on each piece
  4. In a small bowl, mix the crushed pork rinds and Parmesan
  5. Sprinkle the mixture on top of mozzarella
  6. Pour sauce into 6 round baking pan and place chicken on top
  7. Place pan into the air fryer basket
  8. Adjust the temperature to 320°F and set the timer for 25 minutes
  9. Cheese will be browned and internal temperature of the chicken will be at least 165°F when fully cooked
  10. Serve warm
