Chive-Flecked Spud Muffins Recipe

Ingredients

Makes 12 muffins

  • 1¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup leftover mashed potatoes
  • 1/2 cup plain soy milk
  • 1/4 cup canola or grapeseed oil
  • 2 tablespoons plus 1 teaspoon minced fresh chives

Method

  1. Preheat the oven to 400°F
  2. Lightly oil a 12-cup muffin tin or line it with paper liners and set aside
  3. In a large bowl, combine the flour, baking powder and salt
  4. In a separate large bowl, combine the mashed potatoes, soy milk, oil and chives, stirring until blended
  5. Pour the wet ingredients into the dry ingredients and mix until just moistened
  6. Spoon the batter into the prepared muffin tin
  7. Bake for 22 to 25 minutes, until golden brown and a toothpick inserted into the center of a muffin comes out clean
  8. Let the muffins cool about 5 minutes
  9. Serve warm
