Ingredients
Makes 6 servings
- 8 ounce vegan semisweet chocolate chips
- 2 ripe bananas
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped unsalted roasted peanuts
Method
- Melt the chocolate in a double boiler or microwave
- Set aside
- In a blender or food processor, puree the bananas
- Add the maple syrup and vanilla and blend until smooth
- Add the melted chocolate and blend until smooth
- Divide the pudding evenly among 6 dessert bowls
- Refrigerate 2 hours, until well chilled
- Garnish with chopped peanuts
