Chocolate Zucchini Cake Recipe

Ingredients

Servings : 4-6 dishes.

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup coconut oil
  • 1/2 cup applesauce
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tablespoons flax seeds, ground
  • 4 tablespoons water
  • 1 medium size zucchini, grated
  • 1/2 cup cocoa powder
  • 1 teaspoon instant coffee
  • 1/4 cup coconut milk
  • 1 pinch of salt

Method

  1. In a small cup or bowl, mix the ground flax seeds with water and let them soak
  2. In a bowl, mix together the flours, cocoa, baking soda and powder as well as a pinch of salt
  3. In another bowl, mix the coconut oil with the applesauce, sugars and instant coffee
  4. Stir in the flax seeds then the flour mixture
  5. Fold in the zucchini and pour the batter into a 9-inch greased cake pan
  6. Bake in a preheated oven at 350F for 40-50 minutes
  7. Let it cool in the pan then transfer to a serving plate and sprinkle with plenty of powdered sugar
