Coconut And Blueberry Ice Cream


Servings : 2-4 dishes.

  • 1/2 cup shredded coconut
  • 1/2 teaspoon fresh, grated ginger
  • 2 cups coconut milk
  • 1 teaspoon lemon juice
  • 3/4 cup fresh blueberries


  1. In a bowl, crush the blueberries with a fork then stir in the lemon juice
  2. Add the ginger, shredded coconut and coconut milk then pour this mixture into the container of your ice cream maker and churn according to manufacturer’s instructions
  3. When done, transfer to an airtight container and store in the freezer until serving
