Corn Relish Recipe

Ingredients

Makes about 3 cups

  • 1 tablespoon olive oil
  • 1 medium red onion, chopped
  • 1/2 cup minced red bell pepper
  • 2 cups fresh or frozen corn kernels
  • 1/2 teaspoon sugar
  • 2 tablespoons fresh lime juice 2 tablespoons minced fresh cilantro
  • salt and freshly ground black pepper

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion and bell pepper and cook for 5minutes
  3. Stir in the corn and sugar and remove from the heat
  4. Cool completely, then transfer to a bowl and stir in the lime juice, cilantro and salt and black pepper to taste
  5. If not using right away, cover and refrigerate until needed
  6. Properly stored, this relish will keep for 2 to 3 days
