Corn Salsa Pressure Cooker Recipe


Makes about 3 cups

  • 2 cups frozen corn kernels, thawed
  • 1/3 cup chopped red onion
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 to 2 tablespoons finely chopped jalapeno pepper, to taste
  • ½ teaspoon sea salt, or to taste


  1. In a medium bowl, combine all the ingredients
  2. Cover and refrigerate for a couple of hours to allow the flavors to develop
