Cranberry Orange Nut Bread Slow Cooker Recipe

Ingredients

  • 220 g cranberries
  • ½ cup (60 g) chopped walnuts
  • 250 g flour
  • 1 cup (200 g) sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 6 tbsps (85 g) unsalted butter
  • ¼ cup (60 ml) egg substitute
  • 1 tbsp (6 g) grated orange peel
  • ½ cup (120 ml) orange juice

Method

  1. Spray a 2-quart (1
  2. 9 L) mold or coffee can with nonstick baking spray (one that contains flour)
  3. Preheat cooker on high
  4. Grind cranberries and walnuts with coarse blade of food processor
  5. In large mixing bowl, combine flour, sugar, baking powder, and baking soda
  6. Cut in butter to form a coarse mixture
  7. Make an indention in mixture and add egg substitute, orange peel, and orange juice
  8. Beat only until lumps disappear
  9. Add chopped cranberries and walnuts
  10. Stir until evenly mixed
  11. Pour batter into prepared pan
  12. Place pan in cooker, cover, and bake for 3 hours
  13. Cool loaf in pan for 15 minutes and then remove and cool completely
  14. Yield: 12 servings
  15. Per serving: 34 g water; 242 calories (34% from fat, 7% from protein, 59% from carb)
