Cranberry Pork Roast Slow Cooker Recipe

Ingredients

  • 3 pounds (1.3 kg) pork loin roast
  • ¼ teaspoon black pepper
  • 1 pound (455 g) whole berry cranberry sauce
  • ¼ cup (85 g) honey
  • 1 tsp grated orange peel
  • 1/8 teaspoon cloves
  • 1/8 teaspoon nutmeg

Method

  1. Cut roast in half and place in a slow cooker; sprinkle with pepper
  2. Combine the remaining ingredients; pour over roast
  3. Cover and cook on low for 4 to 5 hours or until a meat thermometer reads 160°F (71°C)
  4. Let stand 10 minutes before slicing
  5. Yield: 9 servings
  6. Per serving: 144 g water; 299 calories (20% from fat, 43% from protein, 37% from carb)
