Ingredients
Makes about 1 cup
- 2 garlic cloves, minced
- 1 ripe Hass avocado, pitted and peeled
- 1/4 cup minced fresh parsley
- 1 1/2 tablespoons fresh lemon juice
- 2 tablespoons water
- 1/2 teaspoon salt
- 1/8 teaspoon ground cayenne
- 1/4 cup olive oil
Method
- In a blender or food processor, combine the garlic, avocado, parsley, lemon juice, water, salt and cayenne and blend until smooth
- Add the oil and process until smooth and creamy
- This dressing is best if used on the same day it is made
