Easy Lemon Poppy Seed Cake

Ingredients

Servings : 4-6 dishes.

• 2 cups all purpose flour
• 3 tablespoons poppy seeds
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1 pinch of salt
• 2/3 cup almond milk
• 1/2 cup brown sugar
• 3 tablespoons lemon juice
• 1 tablespoon lemon zest
• 1 teaspoon vanilla extract
• 1 pinch of salt

Method

1. In a bowl, mix the flour, baking powder, baking soda, salt and the poppy seeds
2. In another bowl, mix together the wet ingredients: Almond milk, sugar, lemon juice, zest and vanilla extract
3. Combine the two mixtures and stir well
4. Pour the batter into a greased small cake pan and bake in a preheated oven at 350F for 40-50 minutes or until slightly golden brown
