Ingredients
- Serves: 4
- 1 large cauliflower head, trimmed
- 2 garlic cloves, sliced
- 1/2 onion, chopped
- 2 small potatoes, quartered
- 1 red pepper, sliced
- For sauce:
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- 2 tbsp curry powder
- 2 cups can coconut milk
- 2 cups vegetable broth
Method
- Add red pepper, potatoes, onion, garlic, and cauliflower into the slow cooker.
- In a bowl, whisk together all sauce ingredients and pour over cauliflower.
- Cover and cook on low for 4 hours.
- About 15 minutes before serving add coconut milk and stir well.
- Serve and enjoy.
