Escarole With Garlic Capers Recipe

Ingredients

Makes 4 servings

  • 1 medium head escarole, leaves separated
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon capers
  • salt and freshly ground black pepper

Method

  1. In a saucepan of boiling salted water, cook the escarole leaves until tender, for 5 minutes
  2. Drain and run under cold water
  3. Coarsely chop and set aside
  4. In a large skillet, heat the oil over medium heat
  5. Add the garlic and cook for 30 seconds
  6. Stir in the capers, then add the chopped escarole and season with salt and pepper to taste
  7. Cook, stirring, until the flavors are well blended and the mixture is hot, about 5 minutes
  8. Serve immediately
