Fabulous Fish Tacos With Lime Mayonnaise Pressure Cooker Recipe


SERVES 4, 2 tacos per serving


  • ¼ cup pasteurized liquid egg product (such as EggBeaters)
  • 1 clove garlic, peeled
  • 2 tablespoons fresh lime juice
  • 1 teaspoon grated lime zest
  • 1½ teaspoons Dijon mustard
  • ¼ teaspoon salt
  • pinch chili powder
  • 1 cup light olive oil or combination half olive oil and half vegetable oil


  • 8 fresh corn tortillas
  • 1 pound warm or cold cooked salmon, halibut, cod, tuna, or sea bass fillets, crumbled
  • ½ red onion, thinly sliced
  • 2 jarred whole roasted red peppers or whole roasted green chiles, rinsed, patted dry, and cut into strips
  • 3 cups coleslaw mix
  • 1/3 cup fresh cilantro leaves
  • 1 ripe avocado, peeled, pitted, and thinly sliced
  • 2/3 cup crumbled queso fresco
  • 1 lime, quartered
  • sea salt


  1. Make the Lime Mayonnaise
  2. In a food processor or 2-cup measure using an immersion blender, combine the egg product, garlic, lime juice and zest, mustard, salt, and chili powder
  3. Process until the mixture begins to thicken, 15 to 20 seconds
  4. Immediately begin to add the oil in a slow, steady stream
  5. Continue processing, with an up-and-down motion if using an immersion blender, until thick and creamy, about another 30 seconds
  6. Do not overmix or the mayonnaise can break
  7. Refrigerate in an airtight container until ready to use or up to 2 days

Makes 1¼ cups

  1. Wrap the stack of tortillas in moistened paper towels and microwave on HIGH for 2 minutes, until steamy
  2. To assemble the tacos, place 2 warm tortillas on each plate and spread with 2 or 3 tablespoons of the mayonnaise
  3. Layer in the following order, dividing the ingredients equally between the 8 tacos: fish, onion, pepper or chile strips, coleslaw mix, cilantro, avocado, and cheese
  4. Squeeze over some lime juice and sprinkle with salt
  5. Serve immediately
