Ingredients
Makes 4 servings
- 2 garlic cloves, crushed
- 1/4 cup olive oil
- 2 tablespoons tarragon vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 4 large ripe tomatoes, cut into 1/4-inch slices
- 4 to 8 Boston lettuce leaves
- 2 tablespoons chopped fresh parsley
- 1 tablespoon torn fresh basil leaves
Method
- In a small bowl, combine the garlic, oil, vinegar, salt and pepper
- Stir until blended
- Set aside
- Arrange the sliced tomatoes on a large platter or individual plates lined with the lettuce leaves
- Sprinkle parsley and basil over the tomatoes and drizzle with dressing
- Let the salad rest at room temperature to allow the flavors to mingle, about 10 minutes and then serve
